Cooking Classes with Peter Bennett
Localvore Cooking

There's a lot of talk about local foods...Localvore...what does that really mean?  And how do we
be more of a localvore?  We believe in supporting the local economy for many reasons, least of
which is not that we ARE the local economy!  But without strong local support, our friends and
neighbors would have an even harder time holding their family farms together.  It's about
community.  But it's more than that.  It's also about knowing where your food is coming from
and that it is actually good for us.  By buying locally, we are more able to buy from people we
know or at least know something about, including the state of their farm and the value that
farmer places on producing good, healthy food on healthy land that they are caring for.  And
it's more than that, too.  It's about buying food that hasn't been shipped halfway around the
world, thereby carrying a huge carbon footprint of it's own.  (Criminy!  I have a hard enough
time controlling my
own carbon footprint--now I'm supposed to track the footprint of the food I
eat, too?)  Perhaps you've read or heard about the Real Food Movement or the Slow Food
Movement or the Local Food Movement and want to know more.  Well, let's do more than an
intellectual excercise in what this means--let's cook and eat real food, grown locally, cooked
slowly.  Let's talk about how we can do that practically without getting crazy...over a meal.

These classes will be held on consecutive Tuesday evenings from 5 to about 9 pm, with the first
few hours spent preparing your 5-course meal and sitting down to eat at about 8 pm.  There
will be plenty of time to ask questions and to discuss techniques as well as elements of the
unique cuisine of the evening.  You will not only learn to prepare some o
f Vermont's best local
products
, but you'll also learn that it needn't be very time consuming or difficult to do.  You can
make fabulous meals at home
from healthy Vermont produce.

opened my first coffee shop at age 14.  It's not
that hard to prepare good food.  You don't
need a complicated recipe or fancy tools, but a
few skills that I can show you will make you
feel comfortable with yourself in the kitchen
and that's what it's all about.  We'll cover
knife skills, sauteing, braising and sauces and
we'll talk about knowing your ingredients and
flavors.  These skills are transferable to
other cuisines and styles of cooking and will
serve you well."
