Garden Gazpacho
adapted from California Rancho Cooking by Jacqueline Higuera McMahan, 1983

Gazpacho's a great summer soup...no cooking involved and it's served chilled which is so nice on a
hot day, and it uses lots of good things from your garden...or someone's garden anyway!  This is my
favorite recipe and what you can find in The Seedhouse on a hot summer evening.

The key is to start with a fresh herb base:

3-4 cloves garlic, crushed with 1/2 t salt
1 T fresh chives
a few sprigs of fresh basil
1-2 T fresh parsley
3-4 scallions
juice of a lemon
1/4 c good olive oil
freshly ground black pepper

Chop all the herbs and place everything in a blender.  Do not blend until smooth...this should be a bit
like a pesto.  Then add

4-6 cups chilled tomato juice.

Blend to thoroughly mix.

To this add your chopped vegetables.  I use:

3 large ripe tomatoes
1 cucumber
1 avocado
1 red onion
1 zucchini
